Trader Joe's Elote Dip Upgrade

Trader Joe's Everything and the Elote Greek Style Yogurt Dip is already dangerously good straight out of the tub. It's creamy, corny, a little smoky, and seasoned with that crack-level Everything But the Elote blend that makes you want to put it on your breakfast cereal. But you know what? We can do better. We're going to take this already-great dip and turn it into the thing that gets you uninvited from potlucks because people are tired of your dip being better than theirs. The move is simple: mix it with TJ's Corn and Chile Salsa for extra corn chunks and a hit of heat, pile on fresh cotija cheese because cotija is the superior Mexican cheese and I will fight anyone who disagrees, and finish with a fat squeeze of lime juice because acid is what separates good food from 'I need to sit down for a second' food. The result is a dip so aggressively flavorful that plain tortilla chips feel honored to be in its presence. I made this for a Super Bowl party last year and a guy I'd never met before told me he loved me. We're not dating but I respect his taste in dip. If you've got Trader Joe's Chili Lime Rolled Tortilla Chips, use those for scooping. The lime on the chip plus the lime in the dip is a flavor combo that borders on illegal. Let's fucking go.

Ingredients

  • 1 (12 oz) tub Trader Joe's Everything and the Elote Greek Style Yogurt Dip (refrigerated section)
  • 1 (12 oz) jar Trader Joe's Corn and Chile Salsa (drain about half the liquid first)
  • 1/2 cup crumbled cotija cheese (or use Trader Joe's Crumbled Feta if you can't find cotija)
  • Juice of 1 lime
  • 1 tbsp Trader Joe's Everything But the Elote Seasoning (optional, for extra seasoning on top)
  • Trader Joe's Chili Lime Rolled Tortilla Chips or any tortilla chips for serving

Instructions

    Dump the dip

    Scoop the entire tub of Trader Joe's Everything and the Elote Greek Style Yogurt Dip into a medium bowl. It's thick, creamy, and already has corn, cheese, and elote seasoning built in. This is your base layer. The foundation upon which we build greatness.

    Add the corn salsa

    Drain about half the liquid from the jar of Trader Joe's Corn and Chile Salsa, then dump it into the bowl. The extra corn kernels give the dip more texture and substance, and the chiles add a subtle heat that the original dip is missing. Stir it all together until combined.

    Cotija and lime

    Crumble the cotija cheese over the top and squeeze the lime juice in. Stir to combine. The cotija adds a salty, slightly funky depth that regular cheese can't touch, and the lime juice brightens everything up and cuts through the creaminess. Taste it. Try not to eat half the bowl.

    Season and serve

    If you want to go full send, sprinkle the top with a dusting of Everything But the Elote Seasoning for color and extra flavor. Serve with the Chili Lime Rolled Tortilla Chips if your store has them, or any sturdy tortilla chip. This dip is thick so don't bring some wimpy thin chip that's going to snap in half and leave you digging around in the bowl like a raccoon.

Baker's Notes

  • Drain the corn salsa before adding it or your dip will be watery and sad. Nobody wants a puddle at the bottom of the bowl. Just tip the jar over the sink and let about half the liquid drain out.
  • If you can't find cotija cheese at your TJ's, their Crumbled Feta works as a backup. Different flavor profile but still salty and crumbly enough to get the job done.
  • This dip is even better cold. Make it an hour before your party and let it hang out in the fridge. The flavors get to know each other and the whole thing tightens up.
  • Scoop this onto grilled chicken or fish tacos and watch people lose their minds. It works as a condiment just as well as it works as a dip.
  • If you're the kind of person who puts hot sauce on everything, a few shakes of Trader Joe's Green Dragon Hot Sauce on top is borderline transcendent.

FAQ

Is this just two store-bought things mixed together?
Yes. And it's better than 90% of the from-scratch dips you've ever had. Sometimes genius is just knowing which two things to combine. Michelangelo didn't make his own marble either.
Can I heat this up?
You can. Microwave it for about 60 seconds and stir. The yogurt base gets a little thinner when warm but the corn and cheese hold up. It becomes more of a queso-adjacent situation and honestly it slaps either way.
What if my TJ's doesn't carry the Elote Dip?
It's a newer product so not every location has it yet. If yours doesn't, you can fake it by mixing plain Greek yogurt with the Everything But the Elote Seasoning, some corn, and a handful of shredded cheese. It's more work but it gets you in the neighborhood.
How long does the upgraded version last in the fridge?
About 4-5 days. The lime juice and yogurt base keep everything fresh. Give it a stir before serving again because the corn salsa liquid tends to separate a bit. Still tastes great on day 3.
