Trader Joe's Matcha Tiramisu

TJ's website has a strawberry matcha tiramisu recipe. Cute. But we want the real one. Pure matcha, no fruit hiding behind it. This is a no-bake dessert that takes 20 minutes of your time and then sits in the fridge getting exponentially better while you live your life. Ladyfinger cookies soaked in sweetened matcha, layered with whipped mascarpone cream, dusted with matcha powder. Looks like it took 3 hours. It took 20 minutes. This is a cheat code for impressing people. The mascarpone cream is thick and cloud-like. The matcha-soaked ladyfingers soften into this tender, almost cake-like layer. The green and white stripes through the cross-section are genuinely beautiful. Bring this to any gathering and watch people treat you like you just graduated from culinary school. You opened some packages and layered things in a dish. But keep that information classified.
Ingredients
- 2 packets Trader Joe's Matcha Green Tea (for the soak)
- 1 cup hot water
- 2 tablespoons Trader Joe's organic cane sugar (for the soak)
- 8 oz Trader Joe's mascarpone cheese (room temperature)
- 1 cup Trader Joe's heavy cream
- 1/3 cup powdered sugar
- 1 teaspoon Trader Joe's vanilla extract
- 1 package Trader Joe's Ladyfinger Cookies (about 24 cookies)
- 1 packet Trader Joe's Matcha Green Tea (for dusting)

Make the matcha soak
Dissolve 2 matcha packets and the cane sugar in 1 cup of hot water. Whisk until there are no clumps. Let it cool to room temperature. This is your soaking liquid. It needs to be cool or it'll melt the cream layers later.

Make the mascarpone cream
In a large bowl, beat the mascarpone with a spatula until smooth. In a separate bowl, whip the heavy cream with the powdered sugar and vanilla until stiff peaks form. Fold the whipped cream into the mascarpone gently. Don't stir aggressively or you'll deflate the cream and end up with flat, sad tiramisu. Fold. Like you're tucking the cream into bed.

Assemble the layers
One at a time, dip each ladyfinger cookie into the matcha liquid. QUICKLY. Dip and flip. 1-2 seconds per side. Do not soak them. Over-soaked ladyfingers turn into green paste and your tiramisu becomes matcha porridge. You're dipping, not baptizing. Lay the dipped cookies in a single layer in an 8x8 dish. Spread half the mascarpone cream over them. Repeat: another layer of cookies, the rest of the cream. Smooth the top.

Dust and chill
Open the last matcha packet and use a fine mesh strainer or sieve to dust the matcha powder evenly over the top cream layer. Cover with plastic wrap (don't let it touch the surface) and refrigerate for at least 4 hours. Overnight is better. The ladyfingers soften, the cream sets, and the flavors merge into something significantly greater than the sum of its parts.

Cut into squares or scoop with a large spoon. The layers should be visible: green cookie, white cream, green cookie, white cream, green dust. If someone asks you to bring dessert to a dinner party, bring this. You'll be invited back.
Baker's Notes
- Room temperature mascarpone is crucial. Cold mascarpone is lumpy and doesn't fold smoothly into the whipped cream. Set it on the counter for 30 minutes before you start.
- The ladyfinger dip speed is everything. Too fast and they're dry in the middle. Too slow and they disintegrate in your hand and fall into the matcha liquid and now you're fishing soggy cookie pieces out of green water with a fork. 1-2 seconds per side. Quick in, quick out. Confidence.
- This gets better every day it sits in the fridge, up to about day 3. Day 1 is good. Day 2 is better. Day 3 is peak. Day 4 it starts getting a little too soft.
- If TJ's is out of ladyfinger cookies, their Vanilla Wafer Cookies work as a substitute. Different texture but same concept.
