Erewhon made a Barbie smoothie. Of course they did. The Birthday Wish is a vanilla-beige base with pink pitaya layers running through it, rainbow sprinkles scattered throughout, and a scoop of pink pitaya soft serve type situation on top with more sprinkles. It looks like a birthday cake in a cup. It tastes like vanilla cake batter with a fruity pink streak. It launched during Barbie season and it was exactly as photogenic and exactly as sweet as you'd expect from anything branded with that shade of pink. The two-tone effect is achieved by making two separate blends: a vanilla-oat base and a pink pitaya blend, then layering them in the cup with sprinkles between the layers. It's a little more work than a basic smoothie but the result is undeniably fun. This is the exact recipe. Same vanilla-pink layers, same sprinkle technique, same birthday cake energy. Make it at home for someone's birthday or for yourself on a random Wednesday. Both are valid.

Ingredients

  • FOR THE VANILLA BASE:
  • 1 cup oat milk
  • 1 frozen banana
  • 1/4 cup gluten-free oats
  • 2 tablespoons coconut cream
  • 1 scoop vanilla whey or plant protein powder
  • 1 tablespoon maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon goji berries (optional)
  • FOR THE PITAYA PINK LAYER:
  • 1/2 cup frozen pitaya (dragon fruit) chunks
  • 2 tablespoons coconut cream
  • FOR THE ASSEMBLY:
  • Rainbow sprinkles (natural, gluten-free like Good Dee's brand)

Instructions

    Blend the vanilla base

    Add the oat milk, frozen banana, oats, coconut cream, protein powder, maple syrup, vanilla, and goji berries to your blender. Blend until smooth and a creamy beige-vanilla color. Set aside.

    Blend the pitaya pink

    Blend the frozen pitaya with coconut cream until smooth and vibrant pink. This doesn't need to be a large amount. It's the accent layer, not the main event.

    Layer with sprinkles

    Pour some of the vanilla base into your cup (about 1/3). Add a stripe of the pink pitaya blend. Scatter some sprinkles. Add more vanilla base. Add another stripe of pink. More sprinkles. Fill to the top with vanilla. The result is a vanilla smoothie with visible pink bands and sprinkle layers throughout, like a confetti cake cross-section.

    Top and serve

    Spoon a swirl of the remaining pink pitaya blend on top. Hit it with one more round of sprinkles. This is maximalist. This is a smoothie wearing a party hat. Drink it with joy.

Baker's Notes

  • The sprinkles need to be the kind that don't dissolve immediately. Natural rainbow sprinkles hold up better than the cheap grocery store ones that turn into colored sugar sludge on contact with liquid.
  • Goji berries add a subtle tartness and extra pink-orange color to the vanilla base. Optional but they make the beige slightly warmer and more interesting.
  • Layer slowly and don't stir. The whole point is visible stripes of pink through vanilla. If you stir it you just get pale pink and the concept dies.
  • This is a sweet smoothie. The banana, maple syrup, and oat milk are all contributing sweetness. If you want to cut it, reduce the maple and use half a banana. But this is a birthday smoothie. Sweetness is the point.
