Chris Appleton's Apple-disiac Smoothie (Erewhon Copycat)

Chris Appleton is a celebrity hairstylist who has done Kim Kardashian's, J.Lo's, and Ariana Grande's hair, and he made a smoothie that's dark purple and looks nothing like an apple despite having apple in the name. The Apple-disiac is a dense, thick, dark berry blend with white coconut cream marbled through the bottom third. The actual reference photos show a deep acai-purple body with seed-like speckles throughout and cream pooled at the base. The flavor is rich, berry-forward, and earthy. It's one of those smoothies where the nutrition profile is doing more work than the Instagram appeal, which is almost countercultural by Erewhon standards. This is the exact recipe. Same dark purple blend, same cream marble at the bottom. Don't let the name confuse you. There is no apple in this smoothie and nobody has ever been able to explain why. Just drink it.
Ingredients
- 1 cup almond milk
- 1 packet frozen acai puree (unsweetened)
- 1 cup frozen mixed berries
- 1/2 frozen banana
- 1/2 ripe avocado
- 1 tablespoon almond butter
- 2 pitted Medjool dates
- 1 scoop vanilla collagen powder (optional)
- FOR THE CUP:
- 3 tablespoons coconut cream (thick, chilled)

Prep the cream base
Spoon the coconut cream into the bottom third of your cup. Use the back of the spoon to push some of it up the inside walls slightly. This white cream at the bottom creates the marble effect when the dark purple smoothie is poured over it.

Blend the purple
Add the almond milk, acai, mixed berries, banana, avocado, almond butter, dates, and collagen to your blender. Blend on high for 60 seconds until very smooth and a deep, dark purple. Almost black-purple. The acai and mixed berries together get you to that intensity.

Pour and serve
Pour the dark blend slowly into the cup over the coconut cream. The purple and white will naturally marble together at the bottom while the top stays uniformly dark. It's an understated look compared to some of the more dramatic Erewhon smoothies, but it's elegant. Like the smoothie equivalent of wearing all black.
Baker's Notes
- The avocado makes this incredibly thick and creamy. It's doing the structural work that makes this feel like a meal, not a beverage.
- If you can taste the almond butter, you used the right amount. It should be subtly present, adding nuttiness to the berry base. If you can't taste it, add more.
- Despite the name, there are no apples in any version of this smoothie that has ever existed. The "Apple" is Chris Appleton's surname. The "disiac" is... aspirational.
