KATSEYE's Gabriela Smoothie (Erewhon Copycat)

KATSEYE is performing at Coachella 2026 tonight at the Sahara Tent right before Sabrina Carpenter headlines, and their Erewhon smoothie is as striking as their whole debut has been. The Gabriela is a deep berry-red smoothie named after member Daniela 'Gabriela' Avanzini, and it looks like liquid garnet in a cup. The color comes from cherry, beet juice, and mixed berries combining into this intense crimson-red that photographs incredibly. There's saffron in it, which sounds fancy because it is. Saffron is the most expensive spice in the world by weight, and they put it in a smoothie. The flavor is berry-forward with tropical notes from the pineapple and mango, and the saffron adds a subtle floral warmth that you can't quite identify but would notice if it was missing. Pink coconut cream streaks on the inside of the cup complete the look. This is the exact Erewhon recipe. Same deep red color, same cream streak technique, same saffron mystery. Ingredients

  • 1/2 cup coconut milk
  • 1/2 cup coconut water
  • 1 cup frozen cherries
  • 1/2 cup frozen mango chunks
  • 1/2 cup frozen pineapple chunks
  • 2 tablespoons beet juice (for color)
  • 2 pitted Medjool dates
  • 1 scoop vanilla collagen powder (optional)
  • Pinch of saffron threads (3-4 threads, steeped in 1 tablespoon warm water)
  • 1/2 teaspoon ashwagandha powder (optional)
  • FOR THE CUP:
  • 2 tablespoons coconut cream (thick, chilled)

Instructions

    Steep the saffron

    Put 3-4 saffron threads in 1 tablespoon of warm water and let them steep for 5 minutes. This releases the color and flavor. You'll use the liquid and threads in the blend.

    Streak the cup

    Paint the coconut cream in streaks on the inside walls of your cup. Similar to the Hailey Bieber technique. The white cream will contrast against the deep red smoothie.

    Blend the red

    Add the coconut milk, coconut water, frozen cherries, mango, pineapple, beet juice, dates, collagen, saffron water, and ashwagandha to your blender. Blend on high for 45 seconds until smooth and a deep berry-red. The beet juice intensifies the crimson color without adding much flavor.

    Pour and serve

    Pour the red blend into the prepared cup. The dark red against the white cream streaks creates a striking look. Drink it and appreciate that someone put saffron in a smoothie and it actually works.

Baker's Notes

  • Saffron is expensive but you only need 3-4 threads. A small container of saffron will last you dozens of smoothies. The flavor contribution is subtle but real: a warm, slightly floral, almost honey-like quality.
  • Beet juice is there for color, not flavor. At 2 tablespoons it doesn't taste like beets but it pushes the red from 'dark pink' to 'deep crimson.' If you don't have beet juice, the smoothie will be lighter in color but taste the same.
  • The cherry and pineapple combination is underrated. The tartness of the cherry and the brightness of the pineapple play off each other really well.
