Laufey's The Madwoman Smoothie (Erewhon Copycat)

This is the freshest celebrity Erewhon smoothie in existence and you're looking at the first copycat recipe for it on the internet. The top two thirds is a dusty rose-pink berry blend, and the bottom third is white coconut cream with jet black activated charcoal swirled through it in patterns that look like satellite photos of a mountain range. It's a smoothie that belongs in a gallery. The trick is that you're making two completely separate things. A pink berry smoothie for the top. A coconut cream charcoal marble for the bottom. They don't mix. They're not supposed to. They coexist in the cup like neighbors who share a wall but have never had a conversation. Ingredients

  • FOR THE PINK BERRY BLEND (top 2/3):
  • 1/2 cup coconut milk
  • 1 frozen banana
  • 1 cup frozen mixed berries (raspberries, strawberries, blueberries)
  • 1/2 cup frozen pitaya (dragon fruit) chunks
  • 1 tablespoon maple syrup
  • 1 scoop vanilla collagen powder (optional)
  • 1 teaspoon ashwagandha powder (optional)
  • FOR THE CHARCOAL MARBLE BASE (bottom 1/3):
  • 1/4 cup coconut cream (thick, chilled)
  • 1/2 teaspoon activated charcoal powder
  • 1 teaspoon maple syrup

Instructions

    Make the charcoal marble base

    In a small bowl, spoon out your thick chilled coconut cream and drizzle in the maple syrup. Sprinkle the activated charcoal powder on top and drag a toothpick through it in 2 or 3 swirling motions. Do NOT mix this evenly. You want dramatic black veins through white cream, like Calacatta marble, like something you'd see in a Restoration Hardware catalog. The moment you overmix, it goes gray and you have to start over. Two drags and walk away.

    Add the marble base to your cup

    Spoon the marbled cream into the bottom third of your cup. Use the back of the spoon to gently press some of it against the sides so the pattern is visible through the clear cup. This is the foundation. This is what makes people stop scrolling.

    Blend the pink layer

    Add the coconut milk, frozen banana, frozen mixed berries, frozen pitaya, maple syrup, collagen, and ashwagandha to your blender. Blend on high for 45 seconds until thick and smooth. You need soft serve consistency so it sits on the marble base without sinking through. If it's too thin, add more frozen berries.

    Pour the pink over the marble

    Pour the pink blend slowly over the back of a spoon into the cup, directly on top of the marble base. The spoon diffuses the pour so it lands gently instead of torpedoing through your art project. Fill the remaining two thirds. The line between pink and marble should be visible. Baker's Notes

  • Activated charcoal stains everything it touches with the intensity of a personal grudge. Work on a dark surface and don't wear white.
  • If you take any medications, skip the charcoal and use black sesame powder for the color. Charcoal binds to pharmaceuticals in your gut and can neutralize them. This includes birth control. This is not a throwaway tip.
  • The pitaya chunks are what push the pink from "kinda pinkish" to that deep dusty rose. Frozen pitaya packs are in the smoothie section at most grocery stores. Sambazon and Pitaya Plus both work.
  • Freeze your banana in chunks the night before. A room temperature banana makes the smoothie too thin to hold its shape over the marble layer. Cold and thick is the structural principle here.
