Trader Joe's Matcha Latte Overnight Oats

Overnight oats exist because people want to eat healthy in the morning but also want to do absolutely zero work before 9am. Mood. These use TJ's matcha latte mix as the flavoring, which means the sweetness is built in so you don't have to add honey or maple syrup or whatever sad liquid sugar you normally need to make overnight oats taste like something other than wet cardboard. The oats absorb the matcha overnight and turn this muted green color that looks like a $14 wellness bowl from a cafe run by someone named Sage. You made it in a jar at 11pm while watching TV. Same energy, different price point. The chia seeds add thickness and omega-3s and make you feel like you're doing something responsible, which is nice because you probably aren't doing anything else responsible.

Ingredients

  • 1/2 cup Trader Joe's old fashioned rolled oats
  • 3 tablespoons Trader Joe's Matcha Green Tea Latte Mix
  • 3/4 cup Trader Joe's Oat Milk
  • 1 tablespoon Trader Joe's chia seeds
  • 1/2 teaspoon Trader Joe's vanilla extract
  • Toppings: sliced banana, TJ's honey, TJ's sliced almonds

Instructions

    Mix everything in a jar

    In a mason jar or container with a lid, combine the oats, matcha latte mix, oat milk, chia seeds, and vanilla. Stir until the matcha is fully dissolved and there are no green powder clumps lurking at the bottom. The mixture will be very liquidy. That's fine. The oats and chia seeds will absorb everything overnight.

    Refrigerate overnight

    Lid on. Fridge. 6 hours minimum. Overnight is ideal. While you sleep, the oats absorb everything and swell up, the chia seeds do their gelatinous thing, and in the morning you'll have a thick, creamy, green situation that tastes like a matcha latte in pudding form. You did nothing to earn this. It happened while you were unconscious. That's the beauty of overnight oats.

    Top and eat

    Pull it out of the fridge. Stir it once. Add sliced banana, a drizzle of honey, and sliced almonds on top. Eat it cold straight from the jar because you're an adult and nobody can stop you. If you want it warm, microwave it for 90 seconds, but cold is the move.

Baker's Notes

  • The matcha latte mix already has sugar so you probably won't need additional sweetener. Taste it before adding honey. If it's sweet enough, skip it.
  • Make 5 jars on Sunday night. Breakfast for the entire work week. Done. No thinking required Monday through Friday. This is the closest cooking gets to passive income.
  • Greek yogurt stirred in the morning adds protein and makes it creamier. TJ's has a good plain Greek yogurt that works perfectly here.
  • The chia seeds are doing structural work. Without them, the oats are too soupy. Don't skip them.

Can I use the pure matcha packets instead of the latte mix?
You can but you'll need to add sweetener separately because pure matcha is bitter. Use 1 packet of pure matcha plus 1 tablespoon of honey or maple syrup to get a similar result. The latte mix is easier because the sweetness is built in.
How long do these last in the fridge?
3-4 days easily. The oats get softer each day, which some people prefer. By day 4 they're very soft but still totally edible. Make a batch, eat all week.
