Emma Chamberlain made the most architecturally complex smoothie in Erewhon history and somehow it still tastes like a coffee milkshake your cool older sister would make. The Cold Brew Cookie is three separate components layered in a cup: a raspberry coffee ganache, a vanilla banana smoothie base, and coconut cream between them, topped with cookie crumble and cacao nibs. Then cold brew gets poured over the whole thing. It's essentially a deconstructed mocha that decided to get a wellness sponsorship. The coffee flavor is more subtle than you'd expect from something called a Cold Brew Cookie smoothie. The banana is the loudest ingredient, which is either a selling point or a betrayal depending on how you feel about bananas. This is the exact Erewhon recipe with the same three-component layering method. It's the most work of any smoothie on this list. Three blends, multiple layers, toppings, a cold brew pour. - FOR THE RASPBERRY COFFEE GANACHE:
- 1/4 cup frozen raspberries
- 1/4 cup cold brew concentrate
- 1 tablespoon cacao powder
- 2 pitted Medjool dates
- 2 tablespoons coconut cream
- Pinch of sea salt
- FOR THE SMOOTHIE BASE:
- 1 frozen banana
- 1 scoop vanilla protein powder
- 1 tablespoon almond butter
- 3/4 cup almond milk
- 2 tablespoons coconut cream
- FOR THE ASSEMBLY:
- 1/2 cup cold brew (for pouring over)
- Coconut whipped cream
- 2 tablespoons cookie or brownie crumbles
- 1 tablespoon cacao nibs
Instructions

Blend the raspberry coffee ganache
Add the frozen raspberries, cold brew concentrate, cacao powder, dates, coconut cream, and sea salt to your blender. Blend until smooth and thick. It should be a deep chocolate-raspberry color, almost like pudding consistency. Scrape it into a bowl and stick it in the freezer while you make the next component.

Blend the smoothie base
Rinse the blender. Add the frozen banana, vanilla protein powder, almond butter, almond milk, and coconut cream. Blend until smooth and thick. This is the vanilla-banana layer that provides the body of the drink. Keep it thick.

Layer the cup
Here's where it gets fun. Spoon a layer of the raspberry coffee ganache into the bottom of your cup. Add a thin layer of coconut cream on top of that. Pour in some of the vanilla smoothie base. Add another layer of ganache. Another thin layer of cream. Then the rest of the smoothie base. You're building a parfait.

Pour cold brew over everything
Take the 1/2 cup of cold brew and pour it slowly over the top of the assembled smoothie. It'll seep down through the layers and create dark veins through the lighter smoothie. This is the move that ties it all together.

Add a generous dollop of coconut whipped cream on top. Sprinkle the cookie or brownie crumbles and cacao nibs over it. Serve with a wide straw because the cookie pieces will clog a regular one. Eat this knowing you just built something that has more layers than most relationships.
Baker's Notes
- Make the cold brew concentrate the night before. Coarse ground coffee, water, fridge, 8-12 hours. Or just buy a bottle of cold brew concentrate. Either works. This is a smoothie recipe, not a coffee course.
- The raspberry ganache is what makes this special. It's the layer most people skip when they try to simplify this recipe, and it's the layer that separates this from a regular coffee banana smoothie.
- Use chocolate chip cookies, brownie pieces, or even chocolate graham crackers for the crumble topping. Whatever you have. This is not a precision situation.
- The banana flavor is strong in this one. If you want more coffee and less banana, use half a banana and add an extra 1/4 cup of cold brew to the smoothie base.
