Marianna Hewitt's blue smoothie broke Erewhon's sales records and essentially created the template that every celebrity smoothie collab has followed since. The concept is simple: a vivid cerulean blue smoothie made with spirulina, pineapple, banana, and avocado, poured into a cup that's been prepped with coconut cream clouds and sprinkled blue spirulina so the blue blend marbles against the white cream. It looks like the sky. That's the whole aesthetic. Sky in a cup. The flavor is tropical and creamy, heavy on the pineapple and coconut, with the spirulina adding color but essentially zero taste. Ingredients
- 1 cup almond milk
- 1/2 frozen banana
- 1/2 cup frozen pineapple chunks
- 1/4 ripe avocado
- 1 tablespoon almond butter
- 1 1/4 teaspoon blue spirulina (Blue Majik) powder, divided
- 1 scoop vanilla collagen powder (optional)
- 2 drops vanilla stevia or 1 teaspoon maple syrup
- FOR THE CUP:
- 3 tablespoons coconut cream (whipped or thick from the can)

Create the clouds in the cup
Whip your coconut cream until it's light and fluffy. Spoon a layer into the bottom of the cup. Reserve about 2 tablespoons for the top. Sprinkle 1/4 teaspoon of blue spirulina powder on top of the cream in the cup and along the sides. Don't mix it in. Let it sit on the cream like blue specks on white clouds. That's the look.

Blend the blue smoothie
Add the almond milk, frozen banana, frozen pineapple, avocado, almond butter, 1 teaspoon of blue spirulina, collagen, and sweetener to your blender. Blend on high for 45 seconds until smooth and a vivid blue. The pineapple keeps it from tasting like algae. The avocado makes it creamy. The almond butter gives it substance.

Pour into the prepared cup
Pour the blue smoothie into the cup over the coconut cream and spirulina. When the blue blend hits the white cream, it'll create natural marbling. Baker's Notes
- Blue Majik is the brand name for the blue spirulina powder that Erewhon uses. Any blue spirulina powder works. The blue comes from phycocyanin, a pigment in spirulina. A little goes a long way.
- The avocado is what makes this thick and creamy without being heavy. Quarter of an avocado is plenty. More than that and it starts tasting green.
- Pineapple is the most important flavor ingredient. It overpowers the spirulina taste completely. If you don't like pineapple, this isn't your smoothie.
- Chill the can of coconut cream overnight. The thick solid part whips up like cream. The liquid part doesn't. Use only the solid.
